Potato Cakes are a very simple meal that we have when we have left-over organic mashed potatoes. My husband and I talk a lot about potatoes and wonder what we would do without them. We say, “Thank God for potatoes!” We don’t gain weight from eating them and we feel great! We probably eat them at least 4-5 times a week! Potatoes get a bad rap from many health articles we read, but they are a main staple in our kitchen!
Makes abut 2 large patties per 1 cup mashed potatoes.
Use 1 large egg per 1 cup of mashed potatoes
Some chopped onion, abut 1/4 cup
If we have leftover vegetables, we’ll mix those in. Organic mixed vegetables work great (about 1/2 cup)!
Add salt and pepper
Cook in hot iron skillet in lots of butter over medium heat until browned on both sides. They do fall apart easily when turned.
